Sweet Potato, Sticky Rice and Egg Burrito

I came across a similar, sorta, recipe in the Skratch Lab cookbook a while back. It’s a great idea and very versatile. I like it pretty plain, but you can add things like beans, salsa, bacon or other vegetables. I eat it a lot as a post training meal. The combination of the different carbs and the protein in the egg are almost the perfect combination for refueling your muscles


  • 1 cup of cooked, diced sweet potato
  • 1 cup of cooked, sticky white rice
  • 1/4 cup, shredded cheddar cheese
  • 2 eggs, scrambled
  • salt
  • 2 large, whole wheat or spinach tortillas


Heat the rice and sweet potato in the microwave. Cook the eggs with the cheddar cheese mixed in. Season all the ingredients with salt. Wrap it up.
